Benzoic acid vs sodium benzoate: choosing the right preservative

Benzoic acid (E210) and sodium benzoate (E211) are two of the most widely used preservatives in food, beverage, pharmaceutical and personal-care products. Both work the same way — by inhibiting the growth of bacteria, moulds and yeasts — but they behave differently in formulation.

When benzoic acid is the better choice

Benzoic acid is preferred where low water solubility is not an issue and where its acidic nature is welcome: in alkyd resins, paints and coatings, unsaturated polyester composites, and in some animal-feed applications. It is supplied in molten, flaked or chip form.

When sodium benzoate is the better choice

Sodium benzoate is the sodium salt of benzoic acid and dissolves readily in water, which makes it the practical choice for beverages, sauces, syrups, liquid medicines, cosmetics and household cleaners. It converts to active benzoic acid in acidic products (pH below about 4.5).
