The simplest aromatic carboxylic acid, benzoic acid is a white crystalline solid. For the food, beverage and pharmaceutical industries it serves as an E212 Class 2 preservative and antifungal agent; for industry it is a versatile raw material available in molten and solid (flaked or chip) forms.
